304, 18/10, 18/8 aren’t random numbers stamped on stainless steel cookware to help market pots and pans. They’re actually describing the metals within the alloy, telling you how well the cookware handles corrosion, staining and the demands of a commercial kitchen.

Once you know how to read these grades, you can easily tell how stainless steel pots and pans are made and what it means for your kitchen.

What the Numbers Actually Mean

There are two different types of numbers on stainless steel pots and pans you need to understand to get to the bottom of their quality and performance.

  • 304 and 316 confirm the stainless steel grade, which is the recipe name.
  • 18/10, 18/8 and 18/0 tell you the approximate ratio of chromium and nickel, or the ingredient volumes.

The ratio numbers are the simplest to decode as each number directly confirms a cookware’s approximate make-up.

Why Grade Affects Performance

How much chromium, nickel and other alloying elements are in stainless steel cookware impacts how each piece handles commercial cooking.

  • Chromium helps form a protective layer that helps the pot or pan be resistant to rust, corrosion and staining.
  • Nickel adds more corrosion resistance, also helping the cookware maintain its strength and polished finish.
  • Molybdenum, which is found in grade 316, adds protection against salt and chlorides.

For example, the ratio in 18/10 stainless steel helps it better retain its appearance and resist staining compared to 18/0 cookware. As well as the alloy, the thickness, base construction and handle attachment also affect how well the pot or pan will stand up against knocks, high heat and constant use.

How grade impacts washing

The grade is also going to determine how the cookware fares against a commercial dishwasher’s high temperatures and concentrated detergents. The higher the grade, the better it tends to cope with repeated cycles. Just be wary of salt, food residue and harsh chemicals as they can cause pitting and discolouration if the cookware is not properly rinsed and dried.

304 vs 316 and Where Each Belongs

Both 316 and 304 stainless steel cookware have strong corrosion resistance. The difference is that 316 has molybdenum for extra protection against salt, chlorides and acidic conditions.

Most cafés, restaurants and production kitchens use 304 stainless steel cookware as it balances durability, corrosion resistance and price. Where investing in 316 may be worth it is for coastal venues, marine catering operations or kitchens where there is a higher exposure to concentrated salt and acidic ingredients.

How Stainless Steel Compares to Other Materials

That said, stainless steel is just one type of cookware material. Which suits your kitchen comes down to a few factors.

Induction Compatibility

For stainless steel cookware to work on an induction cooktop, the base needs to include a magnetic material. Grades 304 and 316 are usually not strongly magnetic, so they need a magnetic outer layer or bonded base to be compatible.

To check if your existing cookware is compatible with induction cooktops:

  • Hold a magnet against the base, looking for a firm hold for compatibility
  • Look for an induction symbol or confirmation from the manufacturer
  • Check the base meets the cooktop’s minimum pan diameter and sits flat

Reading a Product Specification

As mentioned, the stainless steel grade doesn’t tell you about the cookware’s construction. Other product specifications to check include:

  • Gauge or thickness, with thicker metals generally being more resistant to denting or warping.
  • Clad construction, which is a heat-conductive aluminium or copper layer that extends through the base and sides for more even heating.
  • Disc bottom, indicating a conductive disc is bonded to the base to improve heat distribution without the higher cost of fully clad cookware.
  • Handle attachment, looking for secure rivets or welds that can withstand repeated lifting and washing.
  • Capacity and dimensions, detailing the usable volume and external measurements, rather than relying on ‘small/medium/larger’.
  • Cooktop compatibility, confirming the cookware’s suitability for gas, electric, induction and oven use.

Even a more expensive option may be outperformed by a well-built pan in a suitable grade if it’s too thin or not suitable for the task.

Choosing Cookware for Your Kitchen

Let’s look at some examples of where each grade may fit in:

  • Small café: Grade 304 cookware with a bonded base, covering sauces, soups and general prep without investing in specialist materials.
  • Busy restaurant: Heavier-gauge or clad cookware may better handle constant heat, repeated washing and fast changes in temperature.
  • Production kitchen: Large capacities, secure handles and resistance to warping may matter more than a polished finish.
  • Coastal or marine venue: Grade 316 may be justified with higher salt and chloride exposure.
  • Mixed cooking line: Combining stainless steel with aluminium for fast heating or cast iron for dishes that need strong heat retention.

This is why a complete matching set may be convenient, but still not suit each task.
